Lavender Shortbread Cookies- #RecipeInBloom

Romantic Lavender Shortbread Cookies- RecipeTime 10 minutes to prepare  -  10-12 minute cooking time- Makes 2 dozen cookies

Ingredients:
3/4 cup organic all-purpose flour
1/2 cup unblanched almond flour meal
2 Tbs. Arrowroot
2 Tbs. Organic Pure Cane Sugar
1 Tbs. Dried Lavender
1/2 tsp ground pink Himalayan salt
1/2 tsp Organic baking soda
1/2 cup butter- chilled and cubed
2 Tbs. fresh organic lemon zest
2 Tbs. Local wildflower honey
1 Tbs. Organic Lemon juice

Preheat over to 350 degrees
Use a standard cookie sheet- place parchment paper on cookie sheet

In a medium bowl- mix the follow ingredients:
flour
almond flour
arrowroot, sugar
lavender
salt
and baking soda- until well combined.
Cube butter into 1/4" pieces and add butter and lemon zest to dry mixture... combine until a coarse dough forms.
Add wildflower honey and lemon juice to the mixture until a soft dough forms.

Spoon 1 inch balls of dough onto baking sheet.
Use the bottom of glass dipped in arrowroot to press the balls into flat discs.
Approximately a half inch thick...
Bake for 10-12  minutes at 350 degrees or until light brown...
Remove from ovenand let cool on cookie sheet for 5 minutes... then transfer to a wire rack.
