Romantic Lavender Shortbread Cookies- RecipeTime 10 minutes to prepare  -  10-12 minute cooking timeMakes 2 dozen cookiesIngredients:3/4 cup organic all-purpose flour1/2 cup unblanched almond flour meal2 Tbs. Arrowroot2 Tbs. Organic Pure Cane Sugar1 Tbs. Dried Lavender1/2 tsp ground pink Himalayan salt1/2 tsp Organic baking soda1/2 cup butter- chilled and cubed2 Tbs. fresh organic lemon zest2 Tbs. Local wildflower honey1 Tbs. Organic Lemon juicePreheat over to 350 degreesUse a standard cookie sheet- place parchment paper on cookie sheetIn a medium bowl- mix the follow ingredients:flour, almond flour, arrowroot, sugar, lavender, salt and baking soda- until well combined.Cube butter into 1/4" pieces and add butter and lemon zest to dry mixture... combine until a coarse dough forms.Add wildflower honey and lemon juice to the mixture until a soft dough forms.Spoon 1 inch balls of dough onto baking sheet. Use the bottom of glass dipped in arrowroot to press the balls into flat discs.
