Orange Roughy with Lemon and Chives - This is one of my favorite recipes- it's Light- and the prep is so Easy! I fell in love with Orange Roughy many years ago- but you can use just about any type of white fish fillets. I love the way the Chive Blossoms look when the fish is plated- and remember- you can garnish just about anything with edible flowers!Ingredients:2 Orange Roughy Filets(you can also use White Fish, Flounder, Cod or Sole)1 Organic Lemon6-10 stems of Organic Chives (with Blooms if possible)Fresh Ground Organic Black PepperFresh Ground Organic Pink Himalayan Salt4 Tablespoons Butter (I LOVE Presidents Salted Butter!)Preheat oven to 375 degree Fcoat a 9 x 9 glass dish with coconut oilPlace 2 filets of Orange Roughy into glass dishMince 2 tablespoons of Fresh Chives and sprinkle over FishPlace 2 – butter pats on each piece of fish (1 tablespoons per pat)Squeeze half a Lemon over the fish- and place the lemon into the panSeason with Fresh Ground Black Pepper and Pink Himalayan SaltPlace dish in 375 degree oven for 45 minutesGarnish with Chive Blossoms and Lemon Wheels – and serve immediately!
